We provide happiness through the produce that we select from our local producers. Most of the vegetables come from the Menu farm in Lesquin, the white asparagus from Raimbeaucourt, the strawberries from Herrin, the young pigeons come from Flanders, the snails from Raddinghem, the regional cheeses are chosen by La Finarde, the butter from the Ferme du Chapître in Bissezelle, etc. We also work with farmers' cooperatives for the quality of their produce. In particular for free-range pork, Charolais beef, suckling veal and free-range lamb from the Coopérative Sicaba in Auvergne. For fish, Boulogne-sur-Mer is not far away, and we are delivered several times a week by Martin.

At the same time, we are are environmentally friendly and have implemented a sustainable development policy with training and awareness-raising for the entire team. It is above all an attitude. This takes concrete form in all of the energy-saving measures, as well as eco-friendly and/or recyclable cleaning products, a locavore approach that we already had in place, 99% production on site, using only seasonal produce, filtered water on site, using organic produce as a priority, promoting organic wines, etc.
